Butternut squash soup is my absolute favorite... if only peeling wasn't such a pain. I steam the squash pieces, blend in a Vitamix, add water, bring to a gentle boil, add grated ginger, salt. So delicious and silky smooth and sweet. You can fancify it by adding some herbs, chopped seeds, etc.
I totally agree about the peeling, what a pain. I've got several small unhelpful helpers surrounding me while I cook, so I've decided that I'm in a season of life where it's worth it to buy the pre-cut stuff, for both time and safety reasons :)

Ha, I see that the Food52 recipe recommends first roasting, then peeling. Will try that next time.
